    Mosaic is crafted to highlight the unique flavor characteristics of one or more coffees. Our roasters explore a variety of roast profiles and recipes to achieve a distinctive result. Mosaic should appeal to those with a more eclectic palate.

    This coffee was grown by Danny Moreno on a piece of land named El Filo. Danny and his five brothers inherited this land from their father Daniel, who divided it into lots for each son. Together, the family built a wet mill, raised beds, and solar dryers to process and prepare their specialty lots. Working together and sharing their facilities with their neighbors, the family has helped elevate the El Cedral community to produce and prepare better quality coffees.

    This version of Mosaic blends two different roast profiles of this 100% Pacas lot from El Filo. One profile to develop complex sugars and raw honey sweetness, and the other to accentuate the juicy chardonnay and tangerine notes.

    Big Joy is a slightly more developed roast than Skyline, and pairs exceptionally well with milk. We use Big Joy for all of our milk-based drinks at our cafe and it brews a dynamic, layered solo shot as well. But don’t count it out as a filter option! It will be delicious and sweet brewed with your favorite brewer. Our current Big Joy is a blend of lots from two different producers located in the Cajamarca region of northern Peru. Together these coffees produce a densely sweet brew showcasing complex sugar flavors and crisp fruit character.

    Moonrise consists of Ethiopia Amaro natural and Honduras Santa Barbara. Naturally processed coffees keep the whole cherry intact during drying, which imparts more intense fruit character and body to the cup. Santa Barbara is known for its competition-worthy coffees, and this community lot is no exception. Together these coffees produce a syrupy brew with a bright, complex acidity. We particularly love this coffee for espresso.

    For Skyline, we select and roast coffees that produce articulate sweetness, complexity, and body. Our roast profile is optimized for espresso extraction. Our current offering is a blend of two outstanding coffees. Colombia Inzá lends cocoa sweetness balanced with juicy red fruit notes. Ethiopia Nano Challa contributes lively flavors such as nectarine, orange, and honeydew melon. Together these coffees produce a brew with crisp fruit character and resonant sweetness.

    Goodnight Moon consists of carefully selected small batch decaffeinated coffees. The roast profile is well suited for all brewing methods. 

    Haile Gebrselassie is an olympic running champion who holds more than two dozen world records. He’s also known as one of the country’s most promising sustainable coffee producers. His farm occupies 1500 hectares in Yeppo Village, Masha, Sidama and was a gift from the Ethiopian government for his athletic achievements. 200 hectares have been dedicated as forest conservation lands, and the rest for coffee production with an environmentally sensitive focus- adhering to both Organic and Rainforest Alliance standards. Masha woreda sits between 1,650 and 1,875 masl and is carefully divided into 46 microlot farming areas for traceability purposes. This coffee is naturally processed and produces a balanced yet fruit-forward flavor profile. In the cup we taste cherry, strawberry, baker’s chocolate, honey, and red grape.
