Eli’s coffee is wet processed with an extended 48-hour fermentation, resulting in a cup marked by structured citrus acidity, layered maple and toffee sweetness, and a lingering finish of blackberry.

This coffee comes from La Montaña, a small four-hectare farm tended by producer Eli Chilcon and his family at 1,800 meters above sea level, where Caturra thrives in increasingly challenging high-altitude conditions. As climate change brings more erratic temperatures and frequent droughts, the family has invested in shade trees, careful irrigation, and thoughtful soil nutrition to protect both the land and the crop. Harvested between July and October, the cherries are handled with patience and precision, rested after picking, pulped, then fermented for 48 hours before being washed and slowly dried over roughly two weeks. The result is a meticulously prepared coffee that reflects both the resilience of its environment and the care taken at every step, from the farm to final preparation for export.
