Kayon Mountain is a family-owned farm operated by Ismael Hassen in the Shakiso district of Ethiopia’s southern Guji Zone, divided between the neighboring towns of Taaroo and Sewana. This lot, sourced from the Taaroo side and nearby smallholders, was selected after evaluating multiple Taaroo and Sewana samples and is notable for the floral, tea-like cup profile characteristic of coffees from Guji. The farm manages its own wet and dry milling, overseeing all post-harvest processing and quality control, and is planted with regional Ethiopian varieties originating from wild western forest stock. This lot is fully washed: cherries are depulped, fermented in water for 24–36 hours to remove mucilage, then dried on raised beds. The resulting green coffee shows uniform screen size with minimal defects after milling and hand sorting.
