The Gatugi Factory operates in Nyeri, along the foothills of the Aberdare mountain range. Farmers for Gatugi are members of the Othaya Farming Cooperative Society, which has its own dry mill operation in Gatuyaini. Producers here generally cultivate 250 or so coffee trees on half acre plots. These small parcels help to ensure careful cherry classification, perhaps the most critical variable for ensuring cup quality. After cherry is delivered, it goes through post-harvest cherry sorting, depulping, floating to remove less dense beans, 72 hours of fermentation, a 24 hour fresh water soak, and multiple stages of hand sorting before and after drying. Gatugi is a sweet and structured coffee with notes of honey, cinnamon, grapefruit, and blackberry.
