Biloya is a long-established cooperative in the Kochere district of Ethiopia’s Gedeo Zone, a place synonymous with some of the world’s most elegant washed coffees. Made up of hundreds of extremely smallholder organic farmers, Biloya has been producing coffee collectively since the late 1970s and today stands as one of the cornerstone cooperatives within the Yirgacheffe Coffee Farmers Cooperative Union. Cherry is delivered daily from nearby farms and processed with exceptional care at the Biloya washing station, where rigorous sorting, slow fermentation in fresh groundwater, and patient drying on raised beds emphasize clarity, balance, and refinement. Kochere’s cool highland climate and dense concentration of skilled growers are central to this coffee’s character, resulting in a cup that feels precise, polished, and quietly complex—an enduring example of why this corner of Yirgacheffe remains so revered.
